Today…I will bake

Sunday has officially become my baking day. The second we get out of church I’m thinking about chocolate chips, peanut butter, and what I’m going to whip up today! After trying the 2 – Ingredient cookies two weeks ago I decided to continue on this “healthy” baking kick and try out another recipe I’ve been eyeing for awhile. I’ve seen this recipe on Pinterest as well as Instragram multiple times. So today was the day to finally try out these Chickpea Blondies. I looked at several versions then kinda made my own by mixing and matching with different ingredients. So not only are these blondies relatively healthy but they are also gluten free – huge perk for me! They are super simple to make – just throw all the ingredients minus the chocolate chips in the blender till the batter is smooth, stir in the chocolate chips, pour into a baking dish, and throw in the oven. They’re also a lot like the 2 – ingredient cookies as you can play around with the recipe. Next time I think I will add shredded coconut, dried cranberries, and white chocolate chips (have to have my chocolate). Or you could use sprinkles, walnuts, peanut butter chips, M&M’s, and the list goes on and on. So grab whatever mix-ins you have in your pantry and get baking!

My Recipe – Ingredients: 
Cooking Spray
1 (16oz) can of Chickpeas, rinsed and drained
1/2 cup crunchy Peanut Butter
1/3 pure Maple Syrup
2 teaspoons Vanilla
1/2 teapsoon Salt
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 Egg
1/4 cup Coconut Milk
1/2 cup Dark Chocolate Chips

Directions: 
Preheat oven to 350 degrees
Spray 7 x 11 dish with cooking spray
Place all ingredients (except chocolate chips) in a food processor or blender
Mix until batter is smooth
Stir in chocolate chips
Pour into baking dish
Bake for 20-30 minutes – careful as they can dry out if over cooked
Place on cooling rack and enjoy!
