Chocolate Chip Cookie Dough Bars aka Heaven

All of last week I had this huge hungering for something chocolate and sinful. Monday, Tuesday, and Wednesday I was able to push it away and get over it by eating my favorite Greek yogurt but by Thursday that just wasn’t cutting it anymore and my mine was fixated on chocolate. So it was obviously time to get in the kitchen and whip something up.

From that came one of my favorite recipes, Chocolate Chip Cookie Dough Bars.  Oh. My. Heavens. It’s sinful and out of this world sweet…in my opinion that’s a very good things! Others like my mom thought it was far to sweet. Whatever she’s a salty person, she just doesn’t get it! The bottom of this bars taste likes a cookie cake while the frosting part taste exactly like licking the spatula of your favorite cookies your mom use to make when you were a tiny tot. I may or may not have licked the spatula for both parts…whoops! They’re incredibly easy to make, take just about 30 minutes from start to finish. As always it’s a recipe I want to play with more. I’m thinking rainbow sprinkles, shredded coconut, and dark chocolate chips next time. Or white chocolate chips, dried cranberries, dried cherries, and white chocolate chips. This time I did use mini chocolate chips for the frosting but definitely not necessary you could use the same semi-sweet regular chocolate chips you use for the batter in the frosting as well. The coconut milk could always be replaced with regular or almond. But again play around with it, make it your own and ENJOY!

Ingredients
1 cup unsalted butter, room temperature
1 1/2 cups light brown sugar
2 teaspoons vanilla extract
2 1/2 cups flour
3/4 teaspoon salt
2 Tablespoons coconut milk
1 egg
1/4 teaspoon baking soda
1 cup semi-sweet chocolate chips

Frosting Add-ins:
2-4 Tablespoons coconut  milk
3/4 cup chocolate chips

Directions
Preheat oven to 350 degrees.
Spray a 9×9 or 7×11 inch baking pan cooking spray
In a  mixer, blend the butter, brown sugar, and vanilla
Then add the flour and salt – mix to combine. Add 2 Tablespoons milk – mix well
Set aside 1 1/2 cups of the batter for the frosting to make while the bars are cooking

With the remaining dough, mix in the egg and baking soda then stir in the chocolate chips
Pour batter into pan and bake for 18-20 minutes
Remove and cool completely.

Frosting
Add 2 tablespoons of milk, more if you want a thinner frosting
Stir in chocolate chips
Frost once the bars are cooled
Cut into squares and ENJOY!
