Cookie Sandwich – My Party Go To

Every family dinner, get together with friends, or holiday party I’m usually the one in charge of dessert. Which is something I really do not mind! I love searching through my grandma’s recipes, Pinterest, and throwing stuff together to make my own creation. Baking if you haven’t noticed is a huge love of mine so being put in charge of it is no chore at all. Most of the time I whip up something new and totally different, which can be a risk as it’s the first time I’ve tried it myself but for the most part it’s worked out wonderfully. Sometimes though I go the safe route and simple route and make one of my favorites, chocolate chip cookie frosting sandwiches. The sweetest of sweet, most indulging, and pure deliciousness. I make the cookies from scratch and occasionally the frosting but this past weekend I went super simple and bought Betty Crocker frosting. I was making these for the weekend at the lake with my boyfriend’s family and wanted to add red, white, and blue M&M’s…well the grocery store was of them. So then I was going to add red, white, and blue sprinkles…nope none to be found. So although they didn’t turned out quite as exciting as I would have liked we did dye the frosting blue (Joshua joined in on the fun) to add a little pizazz. These cookies are super simple and taste amazing on their own if you aren’t wanting the full sandwich but I have to admit they sandwiches are to die for so you might want to just go ahead and grab some frosting while you’re at it!


Ingredients: 
Cookies
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup butter, room temperature
3/4 cup sugar
3/4 cup light brown sugar
1 tsp pure vanilla extract
2 large eggs
2 cups (11.5 oz bag) semi-sweet chocolate chips

Frosting
I used rich and creamy vanilla frosting and mixed in a few drops of blue food coloring

Directions: 
Preheat oven to 375 degrees
Combine flour, baking soda, salt in a small bowl
Beat butter, sugar, brown sugar, and vanilla extract in a large bowl
Add eggs one at a time and blend well between each
Slowly add flour mixture and mix well
Stir in chocolate chips
Place dough in fridge for 20-45 minutes (makes cookies chewy)
Drop round tablespoon size balls on baking sheet
Bake 9 to 11 minutes
Place on cooling rack
Once completely cooled place a tablespoon to two tablespoons of frosting on one cookie and cover with another
Continue till all your cookie sandwiches are made
