Cranberry Harvest Bread

This recipe was recently passed down to my mom from my Aunt’s mother. One look at the recipe and I knew I needed to try it ASAP. What better time to try out a recipe then around the holidays when your home is full of family and you spend the day eating? The only bread I’ve ever really baked before is Banana Nut or Banana Chocolate Chip so this recipe had my stepping out of my little banana comfort zone and trying something new!

I loved the mix of the tart cranberries, sweet batter, and crunchy nuts. The past two days this has been served for breakfast, afternoon snack, and late night treat. The mix of ingredients make it perfect for all occasions! I’m excited to play around with the recipe a little more and change up the ingredients – I’ll be sure to share with y’all if I find another delicious version of it! Ingredients 
2 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
2/3 cup brown sugar
2 tablespoon canola oil
3 tablespoon soft butter
1 teaspoon vanilla
1 tablespoon grated orange vest
2 cups chopped cranberries
1/2 cup chopped nuts {walnuts or pecans}

Directions
Preheat oven to 350 degrees
Spray pans – 2 small loaf pans or 1 large loaf or 1 8×8 baking dish
Whisk first four ingredients together
Whisk next five ingredients in a separate bowl
Make a well in the dry ingredients and add wet ingredients
Mix just until well blended
Stir in last three ingredients
Bake 25-35 minutes
Test with toothpick
Let cool about 10 minutes in pan
