So with summer unofficially starting {officially June 21st} it’s time to break out some summery sweet treats! These citrus cookies are basically summer in cookie form šŸ™‚ filled with lemon, lime, and orange zest they have a refreshing sweet and tangy taste. Fresh out of the oven they’re soft and the perfect amount of chewy! I’ve never really been one to like fruit desserts unless chocolate is also involved but I honestly couldn’t stop eating these cookies. This weekend Joshua and I tried them out with some of our favorite summer beverages – Joshua is an Arnold Palmer kinda guy which definitely paired perfectly with the citrus flavor.

Ingredients
3/4 cup butter, softened
1 1/2 cup sugar
1 egg
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 lime, zested
1 lemon, zested
1 orange, zested

Directions
Preheat oven to 350 degrees
Zest lemon, lime, and orange
Remove 2 tablespoons of zest, in a small bowl mix together zest and 1/2 cup sugar
In a mixing bowl combine butter and remaining sugar
Add egg, mx until well combined
Add flour, baking powder, and baking soda mix until well combined
Slowly add in zest
Roll into tablespoon size balls
Roll balls into the zest and sugar mixture
Bake 8-11 minutes
Enjoy!
