Being snowed in Friday and Saturday meant one thing to us blogger gals…time to be #GIRLBOSSES and get a whole lot of blogging done! We spent all of Friday planning out posts, working on our social media accounts, and coming up with some collaborations. I truly think Friday was my most productive day off of work ever!

With Valentine’s Day right around the corner {just a little over two weeks} we decided to collaborate on a few V-Day posts. Kicking it off is this sweets filled post. There’s no better way to spend a day in than baking and hanging out with one of your bests {and future hubby playing taste tester}.

As I stated in my Gift Guide for your BFF, Galentine’s Day has become a real thing. A day to pamper your best gal pals {mom and sister too}. So we whipped up a few treats to make your besties. Mint Oreo truffles from Corbin and red homemade Oreos from yours truly. Ingredients
Cookies
1 cup butter, softened
3/4 cup powdered sugar
1 1/2 cups flour
1/2 cup corn starch
1/2 tsp vanilla
1 tbsp red food coloring

Frosting
1/2 cup vegetable shortening
1/2 tsp vanilla
1 tsp sugar
3 1/2 cups powdered sugar
3 tbsp hot water

Directions
Cookies
Preheat oven to 325 degrees
Mix together butter and powdered sugar until completely smooth.
Slowly mix in flour and corn starch.
Then add vanilla and food coloring.
Cover a space the counter with flour {lots of flour!} and roll out dough till about 1/4 inch thin.
Use a cookie cutter to cut out circles and transfer to parchment paper.
Bake for 12-15 minutes
Cool on wire rack

Frosting
Beat vegetable shortening, vanilla, powdered sugar, sugar, and hot water until completely smooth.
Spread the frosting on the bottom of one cookie and top with another cookie.
Tip – Press together softly as they will break easily.
Enjoy!
