This flatbread may look familiar if you read Tuesday’s post on Fall Wine & Appetizer pairings. I received several messages for the recipes from the post that I decided to put together a couple of posts containing them. To kick off the recipe posts, I’m sharing the star of the show (in my opinion) the Butternut Squash & Apple Fall Flatbread. This flatbread absolutely screams fall with creamy butternut squash puree, crisp Granny Smith apples, hints of cinnamon and maple syrup, and finally the buttery pecans. That’s about as much fall as you can fit into one dish! 

With fall and the holidays, comes lots of get togethers. There’s potlucks at your office, Friendsgiving with your besties, family dinners with every side of the family, and Thanksgiving. Lots of occasions that require lots of food! While we all have our traditional dishes we like to make, sweet potato casserole, maple brussels sprouts with bacon, macaroni and cheese to name a few. However, it can be quite fun to spice it up a bit with a new recipe. Especially when you are trying to wow your friends or tough to impress mother-in-law. 

Enter a delicious fall flatbread. One that is easy, mouthwatering and honestly pretty healthy! The best part, you can simplify the flatbread even further by buying pre-cut and pre-made versions of the ingredients. Don’t we all love simplifying things during the holiday season when time is feeling a little extra tight! If you’re lucky enough to have a Trader Joe’s near you that would my grocery store suggestion when picking up items for this recipe. That is where I shopped and they not only had everything but how ALL of those pre-cut and pre-made versions of the ingredients.

Aside from the amazing taste of this fall flatbread, it is also incredibly beautiful! With all of those fall ingredients it is packed with rich fall hues – yellow, green, orange and brown. My suggestion is to serve the flatbread on a wood serving board/cheese board after cutting the flatbread into slices. Doing so perfectly displays your fall creation while also making it easy for your guests to grab a single slice…and then come back for more!

Butternut Squash & Apple Fall Flatbread 

Ingredients
  • 3 cups pre-cubed butternut squash
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup
  • 2 cups kale
  • 1 granny smith apple
  • 1/4 cup pecans
  • 1 tablespoon goat cheese 
  • pre-made butternut squash pizza crust – found at Trader Joe’s
Instructions
Preheat oven to 400°F.
Combine the butternut squash, olive oil, and cinnamon in a bowl and toss until evenly coated. Place on a foil-lined baking sheet and roast for 15-20 minutes – until tender.
While the squash is roasting, chop the kale, apple, and pecans. Add to a bowl and toss to combine, set bowl aside.
After the squash is done roasting, transfer into a food processor or blender and add the maple syrup. Process until completely smooth.
Follow instruction on the package of your pre-made butternut squash pizza crust.
Top the dough evenly with the butternut squash puree. Add apple, pecan, and kale mix. Add goat cheese. Add additional goat cheese if you want a cheesier flatbread.
Up the temperature of the oven to 425°F and bake the flatbread for 10-15 minutes, or until the crust is just golden brown and goat cheese is slightly melted.
