Skinny Chocolate Oatmeal Cookies

I’ve tried to chill out on my baking recently as it’s summer and hello bathing suit season. But seeing that I love to bake and truly do have the largest sweet tooth ever I just had to whip something up yesterday and indulge! Thankfully these little goodies are free of sugar, flour, and butter. Thus completely ridding me of guilt and allowing me to truly enjoy! If you’re looking for a sweet treat without the remorse whip yourself up some of these skinny chocolate oatmeal cookies. They may remind you of these far more sinful cookies you had growing up!

Tips: The riper the bananas the sweeter the cookies will be. I definitely recommend using the ripest you have or waiting for them to bruise just a bit. I used special dark cocoa powder but would say using the regular cocoa powder would be better as it wouldn’t be quite so bitter. If the cookies are still not up to you sweet tooths level I’d add a tablespoon to two of light agave nectar. I drizzled some on after wards and it was perfection!

Ingredients 
3 VERY ripe bananas
2 cups gluten free oats
1/4 cup peanut butter
1/4 cup cocoa powder
1/3 cup unsweetened applesauce
1 tsp pure vanilla extract

Directions 
Preheat oven to 350 degrees
Mash the 3 bananas
Mix in the rest of the ingredients
Let sit for about 20 minutes
Place quarter size balls on cookies sheet
Makes about 30 – 35 cookies
Bake 10 to 12 minutes
Let cool for 5-10 minutes
Enjoy!
