This past weekend I decided to spice up date night in a bit with a bake off challenge! Joshua and I selected our own cookies recipes, put a grocery list together, picked up the necessary ingredients, and spent the evening in the kitchen. We put on some music, shared A LOT of laughs, and engaged in some friendly competition. Which resulted in four dozen cookies for us to indulge in and a new date night tradition. 

The best part? Joshua and I decided on our cookies on our own only to realize we had the same kind of recipe in mind. Brownies and chocolate chip cookies together – cookies from  me and bars from Joshua. So naturally it was Joshua that had to come up with a new recipe haha

I completely understand why we both wanted to combine the two classics – one or the other is typically a favorite dessert of everyone. When you combine the two – WOW! Some call these brownie chocolate chip cookies but I’m way more into the playful name of Brookies – it’s like a celebrity couples name. We all remember Brangelina and Bennifer. Much like these relationships these cookies will be gone before you know it! They are THAT GOOD!

As usual, I like to keep butter out of my baked goods so instead of using it I opted to use coconut oil. Which resulted in ultra gooey, melt in your mouth cookies. Ones that are lighter yet more flavorful! 

INGREDIENTS

For the Chocolate Chip Cookie
  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 7 tablespoons coconut oil, at room temperature
  • 1/2 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 3/4 cup dark chocolate chips
For the Brownie Cookie
  • 6 tablespoons coconut oil, melted
  • 1/2 cup dark chips, melted
  • 1 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg + 1 egg yolk, at room temperature
  • 3/4 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees
  2. Line two baking sheets with parchment paper

For the Chocolate Chip Cookie

Step One

In a medium-sized bowl whisk together the flour and baking soda; set aside.

Step two

In the bowl of a stand mixer fitted with the paddle attachment, beat the coconut oil on medium-speed until smooth. Add in the sugars and vanilla – beat on medium-speed until the mixture is pale and fluffy; about 2 minutes.

Step three

Add in the egg and beat until its well combined. Gently fold in the flour mixture with a spatula, stirring only until the flour begins to disappear. Fold in chocolate chips.

Step Four

Cover the bowl with plastic wrap and place it in the fridge for 45 minutes.

 

For the Brownie Cookie

Step one

Place coconut and chocolate chips in a small sauce pan over medium heat and cook for about 2 minutes – stirring constantly – or until the butter and chocolate are completely melted. Remove from heat and whisk until completely smooth; set aside.

Step two

In a medium-sized bowl whisk together the flour, cocoa powder, and baking soda; set aside.

Step Three

Add the sugars and the vanilla to the chocolate mixture and whisk until well combined; about 2 minutes. Add in the egg and egg yolk and beat well. Gently fold in the flour mixture with a spatula. Fold in chocolate chips.

 

Assembly and Baking

Step One

Place 2 tablespoon-sized rounds of chocolate chip cookie dough onto the prepared baking sheets, Place 2 tablespoon-sized rounds of brownie cookie dough directly next to each round of chocolate chip cookie dough.

Step Two

Join the two cookie doughs by pinching them together, make sure there are no gaps.

Step three

Place baking sheets in preheated oven and bake for 12-14 minutes. Let cookies cool for 10 minutes on the baking sheet before transferring them to a wire wrack to cool completely.
