Snow day number two definitely called for some baking. And after seeing this Chocolate Cobbler on a friends Facebook wall the night before it really was all I could think about so into the pantry I went and the baking began! This is such a simple recipe plus if you’re snowed in like me it’s a great one to make because most likely you’ll have all the ingredients. Now I do have to say before you stick it in the oven it looks pretty interesting and I would also recommend using a large dish then me (I had a little spillage going on in the oven…whoops!) Also when it comes out of the oven it’s not the prettiest dish but boyyyyy does it taste delish!! So if you need something to warm you up go ahead and preheat your oven 350 degrees and get baking. P.S. it’d also be a sweet treat for your Valentine – Happy Valentines Day everyone!
I did switch up the recipe a little so here’s my take but if you want the original be sure to head over to Becky Bakes
1 cup all-purpose flour
2 teaspoons baking powder
¼ teaspoons salt
7 tablespoons special dark cocoa powder
1 ¼ cup sugar
½ cup coconut milk
⅓ cup melted butter
1 ½ teaspoon vanilla extract
1/4 cup light brown sugar, packed
1 cup hot tap water
1. Combine the first two ingredients along with 3 tablespoons of the special dark cocoa and 3/4 cup of the white sugar.
2. Then stir in the milk, melted butter, and vanilla – mix until completely smooth
3. After completely mixed pour into an ungreased 8-inch baking dish (not a pie dish like I did)
4. Then mix together the remaining 1/2 cup of sugar, brown sugar, and remaining 4 tablespoons of special dark cocoa. Sprinkle this evenly over the batter.
5. Pour the hot tap water over all. Do not stir! – this is where it starts to look ugly
6. Bake for about 40-45 minutes or until the center is set.
7. Let stand for a few minutes then dive on in!
