Chocolate Chip + Walnut + Banana Baked Oatmeal
Another Sunday afternoon experimenting in the kitchen. Now that warm weather has finally made it’s way back to Charlotte my normal hot oatmeal just isn’t going to cut it any more! I thought I’d change it up just a bit and make a batch of baked oatmeal tonight to eat the next few mornings. I’ve heard it’s great served cool, kind of a litle a breakfast pastry or warmed up just enough to melt the chocolate chips. Of course I couldn’t wait until morning to taste it so last night I tested it warm and straight out of the ramekin…delish! After that I decided it’s not just for breakfast, perfect late night snack too! This morning I tried it at room temperature loaded with strawberries on top and drizzled in light agave nectar. Felt like a sinful Starbucks pastry without all of the guilt!
This recipe is just like the 2 Ingredient cookie – so many different ingredients can be added. Mix in a few of your favorites! After making this I’ve come to realize I have been on quite a oatmeal, banana, and chocolate chip kick recently. Therefore I promise my next recipe will not include oatmeal or bananas..can’t make any promises on the chocolate though! 
Ingredients:
1 1/2 cup Gluten Free Rolled Oats
1 Large Ripe Banana (1 1/2 if medium or 2 if small)
1/4 cup Coconut Milk
2 tbsp. Cocao Powder
1 scoop Vanilla Flavored Whey Protein Powder
1 cup Unsweetened Applesauce
1 tsp. Baking Soda
1 tsp. Baking Powder
pinch of Sea Salt
1/4 cup Chocolate Chips
1/4 cup Walnuts
Directions:
Preheat oven to 375 degrees
Grease 3 inch oven safe ramekins with coconut oil
Mix in bowl – Oats, Protein Powder, Cocao Powder, Baking Soda, Baking Powder, and Salt
Mix in another bowl – Bananas, Applesauce, and Coconut Milk
Stir together dry and wet mixtures, add Chocolate Chips and Walnuts
Pour mixture into ramekins filling to the top
Bake for 30-35 minutes – top will harden while inside will stay gooey
Let cool for 30 minutes
Eat straight from the dish for a gooey treat
Or cool overnight to have in the morning, warm up in the microwave
