Chickpea Cookie Dough

As I think we’ve all established, I have the biggest sweet tooth ever. Recently I’ve been trying to tone it down a bit and work on lowering my sugar intake as it isn’t exactly the best thing for you šŸ™ It’s been hard, a real struggle. I have to be honest though, if I really want something I’m not one to deprive myself of it! At home though there’s been no sweet treats, no chocolate (except cacao nips), and not too much baking. Being home this whole past weekend though I was really craving something sweet! I’ve heard from one of my best girl friend’s how amazing chickpea cookie dough concoctions can be and the obvious health benefits over having the real deal. I was a skeptic, wasn’t quite sure how chickpea “cookie dough” could ever possibly be anything like totally sinful real deal cookie dough. I figured what the heck though, if for some odd reason it was as good (or super similar) I would now have a new gluten free, low sugar, and protein packed sweet treat. Well y’all, it’s DELICIOUS. Creamy, sweet, sinful tasting, and incredibly filling. This recipe makes 6 servings and upon reading that I thought oh great, I’ll be eating every single one of those but no ma’am I’m not even sure I ate a whole serving. This little mix is seriously filling! And y’all it really does taste as good as the real deal! I know your skeptical but don’t knock it till you try it šŸ™‚ you’ll likely be just as obsessed!

Ingredients
1 cup chickpeas, skins removed and patted dry
1/3 cup peanut butter
1 1/2 teaspoons pure vanilla extract
2 tablespoons agave nectar
1/3 cup cacao nibs (or chocolate chips)
I also added about 2 tablespoons of milk to help create a creamier consistency

Directions
Combine all ingredients except for the cacao nibs in a blender or food processor
Blend until completely smooth
Remove cookie dough mixture from blender, place in a large bowl
Add cacao nibs
Mix with large spoon
Enjoy!

Makes 6 servings with each serving having about 250 calories if you use regular chocolate chips and about 200 if you use cacao nibs. Also varies on how many chocolate chips/cacao nibs you like in your cookie dough (personally I like alot!)
