Christmas Baking


So  every one has their favorite Christmas cookie, right? Well that’s what I thought till I started asking the guys in my family and Joshua. So maybe it’s just a girl thing? I mean guys are weird so maybe they just don’t understand that cookies taste better at Christmas and there’s a certain cookie that makes Christmas complete. Baking cookies is one of the best memories I have of Christmas’s growing up {other than opening my first American Girl Doll, of course!}. Growing up my favorite was always Peanut Butter cookies topped with a Hershey Kiss. I think I really just loved plopping the kisses on top and watching them melt just a bit. Well in the last five years I’ve made a change and now my favorite Christmas cookie that I cannot go without is my brother and sister’s favorite {apparently I still have the baby sister issue of wanting to copy everything they do}. Monster Cookies. They’re the best. I don’t know what I was thinking the last twenty years of my life! They combine all things wonderful – peanut butter, chocolate chips, M&M’s, oatmeal, and loads of sugar. I mean really, what’s not to love?

So lucky for you {if you don’t already have a version of it} I’m sharing my family’s Monster Cookie recipe. If you make it, which you should, you absolutely have to tell me what you think!

Ingredients 
6 Eggs
1 pound Brown Sugar
1 pound White Sugar
1 1/2 teaspoon Vanilla Extract
1 1/2 teaspoon Karo
4 teaspoons Baking Soda
1 1/2 pound Peanut Butter
1/2 pound Butter

1/2 pound Chocolate Chips
1/2 pound M&M’s
9 cup Oatmeal

Directions 

Heat oven to 350 degrees
Using an electric mixer at low speed combine all ingredients {except for oatmeal, chocolate chips, and M&M’s} in a large bowl, adding one ingredient at a time
After everything is well combined mix in oatmeal 1-2 cups at a time using a wooden spoon or hands {the messy but easier route}
Once oatmeal is all mixed in, slowly add M&M’s and chocolate chips again stirring with wooden spoon or hands
Drop tablespoon sized balls on baking sheet
Bake 10-12 minutes
Cool on wire rack
Enjoy!

Makes about 8 dozen cookies

Tip: If you refrigerate the cookie dough in between cooking each dozen it’ll make the dough stick together better and make for better cookies!
