Gal-entine’s Day Sweetheart Pop Tarts

Valentine’s Day isn’t just about your significant other! It’s also about the fabulous gal pals in your life that keep you sane and there for you always! Gal-entine’s Day is about celebrating those gals and all that you’ve been through. What better way to show your gals how much you love them, bake them something sweet, cute, and from the heart of course.

I have been wanting to give homemade pop tarts a try for quite awhile now. After seeing them pop up all over instagram from a few health bloggers and recently a few of my favorite lifestyle bloggers as well. So I finally decided to whip some up! Let me start off by saying these are absolutely not healthy 🙂 these are indulgent and absolutely delicious! I had so much whipping these up and playing around a bit with the filling/icing. I think pop tarts just might be my new thing. I already have a few varieties twirling around in my head that I cannot wait to try. So don’t be surprised if pop tarts appear on the blog again soon!


Ingredients
Pre-made pie crusts (3)
Cinnamon Filling
1/2 cup brown sugar
1 1/2 teaspoon ground cinnamon
4 teaspoons flour
1 egg
Jam Filling
3/4 cup strawberry jam {or jam of choice}
Icing
1 1/2 cup powder sugar
2 tablespoons half and half
1/4  teaspoon vanilla extract
2 drops pink food coloring

Directions
Preheat oven to 350 degrees and lightly spray cookie sheet with cooking spray
Roll dough out a little thinner than it comes in package
Use cookie cutter to cut out as many hearts as you can get
With the extra scraps of dough you should be able to get 2-4 more hearts depending on the size of your cookie cutter. Mine was very small!
Cinnamon Filling
Whisk together all ingredients
Assemble
Lay out half of the hearts on cookie sheet
Whisk egg and brush over top of each heart on the cookie sheet
Place a tablespoon of the cinnamon filling or jam on each heart on the cookie sheet
Place another heart on top of the original heart and filling
Press together edges with fingers
Press the tines of a fork around the edges
Poke fork in the top of each pop tart to allow steam to come out while cooking
Place in refrigerator for 30 minutes
Cook for 12-15 if small hearts 15-20 if larger, you want them to be golden
While pop tarts are cooling on a wire rack…
Icing
Mix all ingredients together in a small bowl
Drop a tablespoon of icing on each pop tart while still slightly warm
Cover with sprinkles immediately
Enjoy!!
