After receiving a couple of questions about what I eat regularly, I decided to share my weekday diet!
Happy Friday! So ready to live that weekend life and indulge some this weekend! Who’s with me?
I’ve received a couple questions about what I eat, snacks I like, and what is my post workout go to meal. So I decided to put a little post together sharing what I eat throughout the week.
A couple of things to mention:
1. I’m a creature of habit, I figure out a few things I love and eat them until I’m absolutely over them. Meaning I eat almost the exact same thing every single day for weeks. Then make tiny switches.
2. Overall, I eat pretty healthy and enjoy healthy foods. However, I definitely allow myself to splurge when dining out or when at a party/event. My favorite splurges include french fries {with ranch dressing}, ice cream, and cookies.
3. I am by no means a nutritionist or anything like that, so this post is purely to tell you what I eat and what I like, not to make recommendations for your diet. Unless of course, you like these things as well and want give them a go!
Breakfast
Current Pick: Two Pieces of Avocado Toast with One Egg + Trader Joes Everything But Seasoning and Roasted Red Pepper Flakes
Three Protein Balls – Oats, Peanut Butter, Honey, Water, Protein Powder
Two Rice Cakes with Peanut Butter + Honey
Lunch
Smoothie: Strawberries, Blueberries, 1/2 Banana, Chia Seeds, Cacao Powder, Peanut Butter Powder, Water, Cinnamon {sometimes avocado if I didn’t have avocado toast for breakfast}
I have this EVERY.SINGLE.DAY. I work out right before lunch and then have this smoothie post workout. I love having something cold to cool me down and truly am addicted to smooties/acai bowls. I am in need of some protein powder recommendations so I could love to hear what y’all have tried and what you like!
Afternoon Snack
Dried Apricots
Gold Fish
Crackers
I LOVE snacking! Always have, always will. I would much rather eat small amounts throughout the day so I can basically eat all day haha. Typically, I have one of the above in the afternoon around 3pm when the munchies kick in. Definitely need to find some healthier, protein packed options.
Dinner
This really varies but we cook 3-4 dinners at home each week. Thursday evenings we both have bible study and eat at that. Fridays we sometimes eat out, other times we cook in. Each meal contains a protein {chicken, ground beef, or pork tenderloin}, a vegetable {squash, zucchini, sweet potatoes, corn, and/or spinach}, and typically a grain {rice or couscous}. Sometimes we add beans to the grain {white or black beans}.
A couple of our favorite meals:
Grown-Up Ramen – this is probably our favorite “treat” meal!
Sweet Potato, Zucchinini, and Chicken Breast – it calls for parmesan cheese, however I used vegan mozzarella and it was delicious!
Creamy Herb Chicken – absolutely amazing and you look incredibly impressive when serving this dish!
Ground Turkey Sweet Potato Skillet – again swapped out the cheese it called for, for vegan mozzarella.
Evening Snack
Homemade Stovetop Popcorn with Butter + Salt
Homemade “Healthy” Cookies – banana, oats, and chocolate chips
Homemade Banana Bread {favorite recipe}
UMMMM you eat SO well! I definitely need to stop eating like a child and eat like you;) This all looks delicious!

Your shake looks delicious. What type of peanut butter powder do you use? I use Jay Robb whey protein powder. Very little cards and sugar. 25 g of protein 110cals. Great stuff!! Thanks for your suggestions. They look awesome!!
