I have found my new favorite cookie. These simple chocolate sugar cookies will quickly become a favorite of your family and friends!
This week on Louella Reese it has been all about hosting for the holidays. Including several wine and appetizer pairings, a fall flatbread perfect for fall gatherings and Thanksgiving, and to round out the week, I am sharing a Simple Chocolate Sugar Cookie recipe. These cookies are the perfect sweet treat to bring to a friend’s house for Friendsgiving, the office Thanksgiving potluck or as an extra sweet treat on Thanksgiving day for those that aren’t the biggest fan of pumpkin pie.
These cookies taste sinfully delicious and while they are packed with sugar (hence the name) you won’t find any butter in them! Recently I have been replacing butter with coconut oil in all of my baking and I have to say y’all, I am a big fan! I find the coconut oil makes baked goods denser while also feeling lighter at the same time. If that doesn’t make sense, just wait until you try a cookie from this recipe, you’ll then understand what I mean!
Aside from fall hosting and Thanksgiving, these cookies would be the perfect addition to your Christmas cookie line up! With the rich chocolate flavor and the sugar coating – they’ll fit right in. While also being a fun change from typical sugar cookies.
Simple Chocolate Sugar Cookies Recipe
Ingredients
1 cup coconut oil, softend
1 1/2 cups brown sugar
2 eggs
1 teaspoon vanilla
3/4 cup cocoa powder
2 cups flour
1 teaspoon baking soda
*extra sugar for rolling cookies
Directions
Preheat oven to 350 degrees.
Cream together coconut oil and brown sugar with a mixer until light and fluffy. About 3-5 minutes.
Add in eggs, on at a time, mixing after each addition until well combined. Then add vanilla.
Combine cocoa powder, flour, and baking soda. Slowly add the flour mixture to the coconut oil mixture.
Refrigerate dough for one hour – do not skip this step!
Scoop dough and place onto plate filled with sugar, roll around to coat. Place sugar coated dough on a lightly greased or parchment lined baking sheet. Cookies should be about 2 inches apart from one another.
Bake for 9-10 minutes. Let cool on baking sheet for 5 minutes before placing on cooling rack.
